Za'atar

Za'Atar Chicken strips with veggies

This weekly family favorite was inspired by the Middle Eastern Kabobs locally, I simplified the chicken sizes from chunks to strips to skip the kabob building step. For best results use Organic Chicken Breasts and the freshest Za'atar seasoning you can find. This is also good for prepping ahead.


Ingredients:

3-4 Organic Chicken Breasts

1/4 Cup Oil

1 TBSP Kosher Salt

3 TBSP (but maybe more needed)  Za'atar Seasoning


Instructions:

  1. Cut Breasts into strips about 3 inches long and 1 inch or less thick and place in a casserole dish or pan
  2. Pour oil and salt on the strips and mix with chicken coating all sides then arranging the chicken in a single layer in a casserole dish
  3. Sprinkle the Za'atar all over the chicken and turning to coat all sides, cover is not cooking immediately.
  4. Preheat grill on high or oven to 375°F
  5.  When ready to grill, place individual strips on grates and grill on high for about 5 minutes or more (adjust according to thickness of strips) on each side to make sure the center of the strip is completely cooked with no pink center. If baking, arrange on a baking sheet with rim and bake at 375°F for at least 10 min. (adjust according to thickness of strips) then turning for another 10 min, until completely cooked with no pink on the inside. Note: Chicken should be cooked to an internal temperature of 165°F for safety, however, when using small pieces it is hard to get an accurate reading on a thermometer, so double check for doneness.
  6. When done place on a platter and serve hot with salad, rice and roasted eggplant and zucchini!
