Lemon Garlic Dressing

Ingredients (Organic if you can):

1 Large Lemon (Juiced/Squeezed) 

1 Clove of Garlic (minced)

1/2 Teaspoon of Salt

1/2 cup Olive or Avocado Oil

Splash of Water


Instructions

  1. Place minced Garlic in a cruet, or jar
  2. Pour juice over and add salt and water
  3. Pour oil in, shake and serve


Beet Soup

Hard Boiled eggs

Ingredients:

12 Eggs

Water

Ice


Instructions:

1. 2/3 Fill a large pot (I use a 7 quart dutch oven) with water and bring to a boil

2. Gently place the eggs into the boiling water one at a time with a slotted spoon

3. Set timer to 15 min.

4. 1/4 Fill a large bowl with Ice then add water to cover ice

5. When time is up, remove eggs one at a time and place in ice water and let stand until cool. 

6. Store eggs with shells on in refrigerator until ready to eat


Baked Paprika Chicken

Ok, I will admit, I do not measure anything, so just add as much herbs and spices as you like.

Ingredients:

1 Family pack of organic chicken (about 6 small breast halves?)

1 TBSP? of Olive Oil or Avocado Oil to coat 

1 Cloves of Garlic, minced

2 TBSP? of Everything Bagel Seasoning or Salt & Pepper to taste

Smoked Paprika

Garlic Powder

Red Pepper Flakes

Dried Parsley

Dried Oregano


Instructions:

  1. Preheat oven to 350 degrees F
  2. Place chicken breasts in a casserole dish
  3. Coat with oil and turn
  4. Coat with rest of ingredients
  5. Cover with foil and place in oven 
  6. Bake for about 30 min or until done


Pickeled Cabbage and veggies

Basically slice and dice all veggies and herbs and let sit, it gets better with age.

Ingredients:

1/2 Head of Red Cabbage (sliced, rinsed and drained) 

1 small Zucchini, sliced or diced

1 long thin cucumber, sliced

1 Large Red Onion, sliced thin

3-4 Limes, juiced 

Red Wine Vinegar

Water 

Salt and Pepper to taste

Cilantro (optional)


Instructions:

  1. In jars or a casserole dish layer all veggies
  2. Sprinkle with herbs and salt 
  3. Pour Lime Juice, vinegar and water over to saturate
  4. Mix well 
  5. Cover and Refrigerate until ready to add to your favorite salad or eat as is.
